Indian Fried Rice

400g India Khaas XL Authentic Basmati Rice, washed, soaked in water for 30 minutes and drained, 1 Chicken, without skin, cut into 8 pieces, 100g Ghee / Refined Oil, 90g Onions finely chopped,1 Ginger (adrak) finely chopped, 3 Garlic (lasan) crushed cloves, 12g Green Chillies finely chopped, 2g Turmeric Powder (haldi), 1½ g Red Chilli Powder, 4½ g Coriander Powder (dhaniya), 1½ g Black Pepper Powder (kali mirch)
Heat the ghee in a large saucepan and add the finely sliced onion. Fry till golden brown, remove from the pan and keep aside. To the hot fat, add the washed and drained India Khaas XL Authentic Basmati Rice and the spices. Keep stirring and fry for 4-5 minutes till the Basmati rice appears glazed. Add salt and boiling water an inch above the Basmati Rice. Boil and simmer till the water is almost absorbed and then put into a very slow oven at 250 degree and leave for 20-25 minutes till the Basmati rice is cooked. Serve garnished with fried onions. Hard-boiled eggs cut in slices may also be used as a garnish.
